Chicken is a particularly common leftover in my house, and this week we had just over half a BBQ chicken sitting in the fridge, just waiting to be used.
As the warmer weather approaches with the onset of spring, I felt like a lighter, fresher repurposing would be best. And so the BBQ chicken salad with creamy ranch dressing was made!
And it was super yummy.
