BBQ chicken salad with creamy ranch dressing

A crunchy and colourful salad packed with a variety of flavours make this a perfectly healthy way to use up any leftover chicken, or make it from scratch for that tasty lunch or side!

Too often I’ve been finding myself needing to throw away leftovers because hubby and I don’t feel like eating the same meal that many days in a row…

Such a waste, I know.

So rather than wasting leftovers, why not repurpose them instead?

Chicken is a particularly common leftover in my house, and this week we had just over half a BBQ chicken sitting in the fridge, just waiting to be used.

As the warmer weather approaches with the onset of spring, I felt like a lighter, fresher repurposing would be best. And so the BBQ chicken salad with creamy ranch dressing was made!

And it was super yummy.

Whether it’s from your local Woolies, takeaway store, or one you’ve barbecued yourself, BBQ chicken has its own tasty flavour just waiting to be paired with some fresh flavours.

Basically, this salad is the perfect way to use up any leftover BBQ chicken!

  • 1/2 BBQ chicken (shredded)
  • 1 baby cos lettuce (or any preferred lettuce) (chopped)
  • 1 Roma tomato (diced)
  • 3/4 cup tinned corn (drained)
  • 3/4 cup black beans (drained)
  • 1/2 red onion (diced)
  • 3/4 cup shredded cheese
  • 3/4 cup croutons
  • Ranch dressing
  • BBQ sauce

  • 1/2 BBQ chicken (shredded)

  • 3/4 cup shredded cheese
  • 3/4 cup croutons
  • Ranch dressing
  • BBQ sauce
Instructions
  1. Warm shredded chicken in the microwave.
  2. Place lettuce in a large bowl, then top with chicken, tomato, corn, black beans, red onion, cheese and croutons.
  3. Drizzle an even amount of ranch dressing and BBQ sauce on top, then toss to combine.
Recipe Notes

Add whatever other extras you want! If you don't have leftover BBQ chicken, you can quickly fry some chicken breast before shredding/chopping it.

  1. Looks so good! Salads with chicken, corn, and black beans are always a weakness of mine. Plus this is very similar to a salad I would always get at Panera. It’s currently no longer on their menu so your recipe is the perfect inspiration to make the salad myself at home!
